Dessert Wine Muté is our take on a fortified wine inspired by the acclaimed port styles developed in Portugal and France. With the addition of a neutral spirit, or “muté” to the must, unfermented sugar is preserved by the high proof and the result is a sweet wine with abundant color structure, and purity of flavor. Fortified with a local spirit it is made with Cabernet Sauvignon and traditional port wine grape varieties. Classic in style, but made with a California focus, this is a limited production offering.
California Rosé A lucid deep-salmon complexion is evident and persuasive. Forthright and perfumed with attractive hints of rose petal, red berry fruits and citrus blossom it persuades the palate. A precise and clean entry is succeeded by vibrant flavors of juicy watermelon, ripe cherry, and a red currant core. There is a supportive loamy, wet stone minerality that balances the fruit flavors along with a resolute tinge of acidity for energy and lift.
